Recipe: Banana (nut) bread

Posting this recipe which has become a favorite of many a friend, colleague, and kid. The recipe uses the oven and not the bread maker. You can make this as just banana bread, or add chopped pecans/walnuts if you like them.

Ingredients:

3 cups whole wheat or all-purpose flour
2 cups sugar
4 ripe bananas, mashed (mash should be roughly 2 - 2.5 cups)
3 eggs
0.5 cup chopped pecans or walnuts (optional)
1.5 cups oil**
1 tsp ground cinnamon
1 tsp vanilla essence
0.5 tsp salt
2 tsp baking soda
2 loaf pans (for baking)
**For low-fat recipe, use 1 cup applesauce and half cup oil

Method:
Preheat oven to 350 degrees fahrenheit. Coat the bottom and sides of two loaf pans with butter/margarine, and dust all over with flour. In a mixing pan, mix together all dry ingredients except baking soda. Now add all the wet ingredients and mix well. Finally add baking soda and mix. Pour into two loaf pans and bake at 350 degrees fahrenheit for 50 mins to an hour.

Cool uncovered, or covered lightly with a paper towel (basically bread should vent without becoming too dry). Then cover and store. Stays fresh outside fridge for 3-4 days. Can store this refrigerated for 7-10 days. Or slice up and freeze the slices, to be thawed and eaten later.

Tip: if you have overripe bananas, don't throw them away. You can use them directly - or freeze them, and use them in this recipe.

    I have used mashed tofu instead of eggs - quarter cup of tofu per egg. Added half tsp more of baking soda to help it rise better. Comes out pretty decent.

    For the eggless version, use all-purpose flour rather than whole wheat flour. Reason: the tofu gives the bread a more dense, moist texture - and the moisture tends to react with the fiber in whole wheat flour and cause it to sort of ferment(!). You might want to refrigerate this version pronto.

    Oh, this recipe is awesome. A dear friend made this for me when I was visiting her. Food was such an integral part of the time we spent together, and this banana bread was the best of all. Even better than the vegetarian fajitas at Salsas. She packed some for me when I was returning home, and I made it last as long as I could.

    Yummy... makes my mouth water.. do you think this is appropriate to bake as a birthday cake? Can I put icing/whipped cream on top?

    Is it me? Or is everyone not able to get into DSS? Everytime I click on goodwritings.blogspot.com it takes me to the blogger home. I have found my ways of beating the errors in the system, but wondering if all forces are against just me [the poor victim] or if misery has company.

    Funnycide - yes you can put icing on top. But the bread itself is sweet, so you might want to put whipped cream or some less sweet icing.

    I was going to ask for an eggless recipe too. but seems like it is already asked and answered. thanks. :)

    funnycide. try clearing your cache. don't know if that helps. For me once it was spywares that caused a similar problem. so you can try using Ad aware.
